Best Pavlova in Sydney, AU

The Pavlova, inspired by the Opera House's iconic sails, was almost too beautiful to eat. Its crisp meringue and tangy passionfruit curd proved irresistible.

Whenever I'm at Rockpool, I can never resist Catherine's Passionfruit Pavlova. It's everything a good pavlova should be, but rarely is.

The raspberry meringue cracks open to reveal a yoghurt chantilly centre and a crown of rose, plated above a bowl of smokey dry ice.

Their pavlovas are gorgeous and they give you the option of having the cream and fruit separate to prevent the meringue from getting soggy.
